On the last Friday of every month we will be sharing a recipe that you can do at home. We may share ideas more often than this but to keep it realistically manageable to write and test we have decided to commit to the once a month.
These recipes I ( Terrie) have tried and tested at home and work well for me. They are really versatile and its easy to change them up for different dietary needs, cooking for a child with multiple food allergies I happen to have few handy adaptable recipes up my sleeve.
In the pictures for this I didn't have any sweetcorn as I didn't have any at home, but like I said above you can change it to suit you and your family.
Ingredients
-4tbs. passata / tomato puree - 1tsp mixed herbs - grated cheese ( or cheese alternative) - 4 or 5 olives sliced (omit for those who cant stand) - 2 mushrooms thinly sliced - 2 tbsp. sweetcorn ( tinned or frozen) - shop bought puff pastry ( ready rolled is a life saver!) - 1/4 red pepper thinly sliced - 2tbs milk ( or df alternative)
Instructions
Pre heat oven to 200 c 1.To begin unroll shop bought ready rolled puff pastry and cut in half ( if you do not cut in half this will still work but the rolls will be much larger in the end) 2.mix passata and mixed herbs together
They are great eaten straight away or cold the next day for lunches. They can be frozen after cooking and stored in an airtight container..
These are really versatile, you can add whatever toppings you like! Pepperoni, pineapple, spinach, sausage, go crazy! They can be made to suit most allergies or food preferences too!
